Thai Rice Side Dish

2 cups long-grain white rice
1 can 15.25 oz. corn
1 can 4 oz. sliced chillies
1 packet 2.8 oz. Thai green or yellow
  curry paste
1 container 10 oz. bean salad
1 container 7 oz. tabula salad
Thai coconut curry sauce

Cook rice in large pot. During last 5
minutes stir in other ingredients
except coconut curry sauce. When fully
cooked, allow to cool, transfer to
air-tight container and refrigerate.
Top with coconut curry sauce* and serve.

*May heat before adding

Mexican Taco Salad (Without Taco)
=================================
1.2 lbs. 93% lean ground beef
1 finely-chopped green bell pepper
1 finely-chopped white or yellow onion
1 packet Mexican taco seasoning
shredded lettuce
sour cream*

*May substitute spreadable cream cheese
or Greek yogurt

Chop bell pepper and onion and steam in
pot. At same time cook ground beef in
skillet and drain fat. Combine bell
pepper, onion, and taco seasoning. Allow
to cool, transfer to air-tight con-
tainer, and refrigerate. Serve with
shredded lettuce topped with sour cream.
